Here Fishy, Fishy.

After our hula cake delivery we went fishing. It was nice to get away from the craziness that has been going on and just be. Gigi lives about halfway to one of our favorite fishing spots, so we seized the opportunity. I caught a croaker and a teeny tiny catfish.

Jason caught a.....
Oh that's right, he didn't catch anything! BAHAHAHAHAHAHA. I kept giving him a hard time and putting my pole down to sit in a camp chair and drink my cheap gas station wine out of the tiny bottles that make me feel like a giant and exclaiming, "I shall take a break so you can have a chance to catch something!" Then he'd act like he was going to cast his reel right into my face and we'd laugh. Ahhhhh, love.
It was a very peaceful afternoon.

This poor little broken down flower made me smile. :o)

Of the Old.

So I am talking with a friend on the phone and she is comparing her ex to Spencer Pratt and her sister's style to Audrina's and we bust out laughing together over the fact that we are somehow comparing the people in our life to characters from The Hills. *smacks forehead*

So then I tell her that she is like Blanche and I am totally Dorothy and we are straight from The Golden Girls and the universe is back on track again.

Muffin Pimp.

If there is one thing I love, it is the fact we live in an age of convenience. I can buy an entire meal in a bag at the grocery store that just has to be heated up on the stove. I can pay our bills online automatically. Video rentals get delivered by mail. I can buy butter in the spray form. There is a Walmart/Target/CVS on every corner.

Which leads me to the point that some conveniences have kept me from trying certain things. Like, for instance….. things from scratch. Namely, muffins. Well, last night I was feeling wild and thought I would do something unheard of. I placed the premade blueberry muffin mix back on the shelf (GASP!) and I put on my big girl apron.

I can admit that baked goods from scratch that involve “rising” scare the bejesus out of me. Some people fear spiders, snakes, heights. I stress about perfect baking measurements.

To cut to the chase, I found an incredible recipe that was easy (GASP!) and fairly hard to screw up and it was so yummy, I have to pimp it out for all to enjoy.

So I give you:

To Die For Blueberry Muffins

INGREDIENTS

1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon

DIRECTIONS

Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.

Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.

To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.

Bake for 20 to 25 minutes in the preheated oven, or until done.

Lots of love, Mack

No Vegetable Is Safe.

And now for your weekly old-married-and-boring entry! Let's talk vegetables! We've been watching our tomato plants like hawks waiting for one of the tomatoes to turn red. And alas! Yesterday one of the cherry tomatoes had finally ripened!

So, of course we had to document the picking of the first tomato, because, well, we are weird like that. Plus, you know I never pass up a chance to post a pic of myself looking like crap in my sweet house shoes! Hot!

Vacationed.

.
.
We're baaaaack! Florida was INCREDIBLE. I'm pretty sure we need to retire there in one of those old folks homes by the sea. Boca Vista or somesuch. I can play conasta on the beach and Jason can fish straight from his Rascal scooter and life will be good.

.
.
Forgive my lack of words, my mind is still laying on the beach, onto the pictures! Some of my favorite things from the trip:

Cruising in the rental.

Our digs for the week!

Our neighbor, Scully.

THE BEACH. THE BEACH. THE BEACH.

6-month Anniversary Dinner at Chart House.

Relaxing on the deck in the evenings.

Surf lessons... hehe
.

DISNEY!! I think I did a cartwheel out of bed that morning.

Visiting my family.

Collecting shells.
